Shrimp with Red Chile and Piñon Nuts

Shrimp with Red Chile and Pinon Nuts.

If there is a reason that the Chile Pepper is the only food that has it's own god, this recipe is a perfect example - 2 lbs of fresh shrimp are sautéed in rich, grassy olive oil with 2 cups of Piñon Nuts until the shrimp is cooked through and the nuts are golden brown. Then New Mexico red chile powder is added (generously - this recipe calls for nearly a cup of fresh ground red chile powder) and stirred into the shrimp with an overflowing quarter cup of hot honey. Finally, just before serving mix in 3 tablespoons of heavy cream, and serve. Awesome.

It is pretty wonderful - however you have to use the right chile powder. Too hot and it will kill you, and if the chile powder isn't fresh it tastes off. I use a mix of mild and medium New Mexico chile powder (I like the Chimayo style chile powders) if you use off the self chile powders from most grocery stores it really doesn't work out.
